MASAK GULAI DAGING KELANTAN GULAI KAWAH

CINTA NAN SARI


Bahan-bahan:

½ kg daging lembu tempatan
6-8 biji bawang merah
2-4 ulas bawang putih
1-2 cm lengkuas
2 sudu besar biji ketumbar
2 keping asam gelugor
1 cawan santan pekat
1 cawan santan cair
3-5 biji kentang
1-2 paket kecil rempah gulai (boleh beli di Pasar Borong)
3 sudu besar kerisik
2 biji cili hijau (kalau nak tambah pedas)
2-3 sudu gula melaka
2 asam keping
Garam secukup rasa

Cara-cara:
  1. Potong daging melintang urat dan nipis-nipis supaya mudah empuk. Bersihkan, kemudian toskan. 
  2. Goreng tanpa minyak biji ketumbar dan blend.
  3. Blend lengkuas, bawang merah dan bawang putih bersama ketumbar.
  4. Potong 4 or 6 ubi kentang (ikut saiz ubi kentang).
  5. Rebus daging dengan air biasa dan masukkan bahan tumbuk bersama rempah gulai, Masak sehingga naik bau.
  6. Masukkan santan cair, kentang dan asam keping dan masak sehingga daging empuk. Boleh tambah air jika mahukan lebih kuah.
  7. Masukkan santan pekat dan kecilkan api. 
  8. Masukkan kerisik, garam dan gula melaka. Masak sehingga menggelegak untuk bagi kentang empuk. jangan lupa kacau sekali sekala untuk elakkan hangit.
Nak pedas lagi boleh masukkan cili hijau selepas masak semasa nak dihidangkan!
